Spanish: Mussels with Sofrito Sauce

(serves 4)

Ingredients:
- 2 cups Sofrito sauce
 - 1 cup red wine
 - 2 lbs mussels (fresh or frozen)
 - Fresh parsley, chopped (for garnish)
 
Procedure:
- Add Sofrito sauce and wine to a large pot
 - Add mussels and mix well
 - Cover the pot with a lid and cook for 4 minutes
 - Remove lid to check on mussels, stir and cover again; cook 2 additional minutes
 - Remove pot from heat, transfer mussels and sauce to serving dishes; discard any unopened mussels
 - Serve with lots of crusty bread to mop up the rich sauce
